    NO-BAKE ENERGY BITES

    Easy to make and irresistible! This no-bake recipe is great to make and keep on-hand as a sensible snack or pre-workout nosh. Fun and satisfying to make with kids with old fashioned oats, toasted coconut, peanut butter, flaxseed and semi-sweet chocolate chips. Customize these to your taste (peanut allergy? Omit the peanut butter and substitute with sunflower seed butter); love coconut? roll these in extra toasted coconut after they're done. Chocolate LOVER? Roll these in cocoa powder for a velvety outer layer. Adore a sweet-savory pop? roll these in a little Sel Magique Pure Fluer de Sel as a last step. However you like them, these energy bites might just become your new favorite 🙂

    Ingredients

    • 1 cup old-fashioned oats (rolled oats)
    • 2/3 cup shredded coconut, sweetened or unsweetened to taste; toasted.
    • 1/2 cup creamy peanut butter substitute sunflower seed butter
    • 1/2 cup ground flaxseed
    • 1/2 cup semi-sweet chocolate chips substitute vegan chocolate chips
    • 1/3 cup honey
    • 1 tbs chia seeds, optional
    • 1 tsp vanilla extract
    • 1/2 tsp Sel Magique Pure Fleur de Sel

    Instructions

    • Preheat oven to 325 degrees f (the recipe is technically a no-bake recipe but we DO need to toast the coconut, or if you prefer leave it as-is. We prefer the toasty goodness 🙂
    • Spread coconut flakes on a baking sheet in a thin layer and bake in preheated oven for 5-10 minutes, stirring every few minutes. When coconut is toasted to your liking, remove it to a bowl to cool and to stop the cooking process.
    • Stir everything together.  Stir all ingredients together in a large mixing bowl until thoroughly combined.
    • Chill. Cover the mixing bowl and chill in the refrigerator for 1-2 hours, or until the mixture is chilled.  (This will help the mixture stick together more easily.)
    • Roll into balls.  Roll into mixture into 1-inch balls. If you want to roll the bites in extra coconut, cocoa powder, or a little Fleur de Sel, now is the time.
    • Serve.  Then enjoy immediately!  Or refrigerate in a sealed container for up to 1 week, or freeze for up to 3 months.
