CHILE GINGER SHRIMP
Grilled or broiled, and marinated in a bath of flavorful spices, these shrimp are a crowd pleaser. Serve alone as an appetizer, or with a watermelon salsa. These can be grilled or broiled, or make them as a kebab with a mix of shrimp, bell pepper, white onion, and zucchini. Also, use these in tacos, over pasta, over a salad - even serve cold - they keep 3 days in the fridge in an airtight container.

Ingredients
PINEAPPLE WATERMELON SALSA
- 1 small bell pepper, chopped
- 1 cup diced seedless watermellon
- 1/2 cup diced fresh pineapple
- 2/3 cup chopped red onion
- 1 jalapeño, deseeded, chopped
- 2 tsp rice vinegar
- 1/2 cup chopped fresh cilantro
- 1 tsp lime juice
- Sel Magique Salt & Pepper Blend, to taste
SHRIMP & MARINADE
- 1 lb fresh large shrimp, deveined, peeled, tail on
- 3 tbs sesame oil
- 2 tbs low sodium soy sauce
- 1 tbs Sriracha, or your favorite hot sauce
- 1 tbs fresh chopped ginger
- 1 tsp minced garlic
- 1 tsp minced fresh ginger
- 1 tsp lime juice
- 1 tsp honey
- sesame seeds, for garnish
- Sel Magique Classic Blend, to taste
Instructions
PINEAPPLE WATERMELON SALSA
- Prepare your vegetables by chopping/dicing them to the desired salsa thickness. Place all of the first 6 ingredients into a glass or ceramic serving bowl. Mix in the chopped cilantro and splash of lime juice. Add a dash of Magique to taste, don't use too much. Mix together.
- Chill in the fridge for about 30 minutes to blend the flavors.
SHRIMP & MARINADE
- Whisk marinade ingredients together in a small bowl. Combine shrimp and marinade together in a ziplock bag or bowl, reserving 1-2 Tablespoons for brushing the shrimp while it cooks. Cover and refrigerate in the fridge for 20-30 minutes.
- Broiler: Preheat broiler to 500F. Line sheet pan with foil. Place shrimp on pre-soaked skewers (if desired) then on the lined sheet pan. Place pan in the oven and broil for 5-6 minutes total, turning halfway through.
- Grilled: If grilling with wood skewers, be sure to soak skewers in water first, preheat the grill, and spray with cooking oil. Place shrimp on pre-soaked skewers and grill for 5-6 minutes total, flipping halfway through.
- Shrimp will be opaque with whitish color when fully cooked and will continue to cook once you’ve removed it from the heat.
- Brush shrimp with extra marinade and sprinkle with sesame seeds before serving.
- Serve with the salsa, or to your preference. Enjoy!
