BAKED AVOCADO FRIES & SPICY RUSSIAN DIP
The curiously fantastic surprise of a baked and crunchy slice of avocado, enjoyed as a fry - all the flavor, none of the oil. TIP: These make fantastic taco fillings too!
Ingredients
BAKED AVOCADO FRIES
- 2 avocados, ripe but still firm. don't use overly ripe avocados!
- 1/2 cup flour, general purpose white
- 1 cup panko
- 1/2 tbs dried oregano
- 1/2 tbs garlic powder
- 1/2 tsp chili powder
- 2 egg whites, large
- 1/4 tsp Sel Magique Salt & Pepper Blend
- 1 fresh lime
SPICY RUSSIAN DIP
- 1 tbs onion, finely chopped
- 1 cup mayonnaise
- 1/4 cup ketchup
- 4 tsp horseradish, finely chopped prepared
- 1 tsp Worcestershire sauce
- 1/4 tsp sweet paprika
- 1 tsp Hot Sauce Tabasco, or your favorite brand
- dash Sel Magique Salt & Pepper Blend
Instructions
SPICY RUSSIAN DIP
- In a mortar and pestle, mash the onion to create a paste, or use a large heavy knife to mince and mash the onion into a paste. Transfer the onion paste to a small bowl and whisk in the mayonnaise, chili sauce, horseradish, hot sauce, Worcestershire sauce, and sweet paprika. Season to taste with Magique. This can be kept in the fridge in an air tight container up to two weeks. This is great for fresh chilled veggies - also delicious as a sauce for meats and sandwiches.
BAKED AVOCADO FRIES
- Preheat oven to 425 degrees f
- Prepare a baking sheet with parchment
- Place panko separately onto another plate.
- Place egg whites in a small bowl, and whisk until foamy.
- Halve avocados, remove pits, and cut each half into 6 wedges. Pull off peels.
- Dredge avocado wedges in flour, dip in egg white, and then dredge and press to coat in panko.
- Arrange the prepared slices on the baking sheet.
- Bake 10 minutes till almost golden brown. Set aside and let cool 45 minutes to an hour. When youre ready to serve, bake for an additional 8-10 minutes till golden brown. You can also put them under the broiler till golden brown, just keep an eye on them so they dont burn. Garnish with slices of lime and/or squeeze fresh lime juice and a generous dash of Magique just before serving with the Spicy Russian Dip. Enjoy!
